Lemon Bars

 

Crust:

8 oz.      Margarine

2 cups    Flour

1/2 cup  Sugar

Mix together until it forms a solid dough.  Do not over mix.  Pat into an 9 x 13 aluminum pan (brownie pan).  Bake crust at 330 degrees for about 20 minutes.

Filling:

4 ea.        Eggs

2 cups     Sugar

Pinch of   Salt

3 oz         Lemon juice

2 tbsp      Flour

1 tsp        Baking powder

 

While crust is baking, mix remaining ingredients well on medium speed.  After mixing well, pour filling over baked crust and smooth out.  Bake an additional 35 minutes at 300 degrees or until filling is set.  Freeze, cut, and sprinkle with powdered sugar.

Yields: 36 Bars
